Maple Walnut Muffins

2 eggs
1/2 cup of Maple Syrup, preferably Grade B
1/2 cup plain yogurt
2 tbsp melted butter
1 cup rolled oats
1 cup whole wheat flour
1/2 teaspoon salt
1 tablespoon baking powder
1 cup roughly chopped walnuts

Beat the eggs with the maple syrup, yogurt, and melted butter - reserve. Separately, mix the oats, flour, salt and baking powder together. Add the dry ingredients. Stir until just blended, do not overmix. Fold in the nuts. Add to buttered muffin tin. Preheated 350F for 25 mins. Makes 10.
